hey,
just wondering what you guys think is the best server type to have a site on. I think either linux or Unix is great to have.

It depends entirely on your requirements and what you are capable administering. The admin's expertise will determine how well and how secure the server will be.
Just my $0.02.

If we are talking servers, yes, i would say that linux is the best. It has been developed from the ground up in the kernel for supporting a type of system like this.
You can have everything you need, running, nothing more..like a GUI which you dont need on a server.
But then again, it also depends on what you are doing, what web development technologies you know, and what technologies the server supports.
With ColbatRAQ's.. Everyone used to make jokes about them that they would melt.. What an unter load of :X. RAQ's are just running a modified version of linux/unix and contain a different hardware setup.
Cobalt RAQ's are no good. I've had so many trouble with those. Biggest problem with em is that updates (security or otherwise) of software always come way late for RAQ's, making em quite vulnerable. I'd rather go for a good, custom linux server. Of course it's a bit more expensive, but it works better and can be customized easier.
